On our last visit to Vegas, we stayed at the fabulous Green Valley Ranch, and as soon as we walked in we knew we definitely wouldn’t go hungry. Like most casinos they have many restaurants on their property, but Green Valley boasted one major difference other casinos don’t have, Pizza Rock. Before even trying Pizza Rock we overheard several people talking about how fantastic it was. When you overhear others saying how great it is, you know you have to try it out for yourselves.
We took the kids with us and they loved the big rig semi-truck in the middle of the restaurant and couldn’t wait to try some good pizza. My son is our official taste tester when it comes to pizza. Even though he’s only five, he makes it his business to know a good pizza. It’s pretty cute and hilarious!
My son and his dad ate the margherita pizza, and I should note that this pizza was the World Pizza Cup Winner in Naples, by Chef Tony Gemignani. It’s definitely made a big name for itself and we had to try it! My little boy couldn’t get enough of it and in the end I think he ate almost half the pizza (including leftovers).
I tried the River City Ranch - Thin Crust, Ranch, Mozzarella, Chicken Breast, Bacon, Garlic, Cherry Tomato, and Green Onions. I love a well-made white sauce pizza and this is definitely at the top of my list now. It was so delicious that I had a hard time sharing!
One of the best things you will find on the menu isn’t a pizza at all, it’s actually an appetizer. Let me introduce you to Coccoli - Sea Salted Fried Dough with Prosciutto and Burrata Cheese. These babies will melt in your mouth and you will definitely be asking for more. If you aren’t eating alone, make sure to grab several orders, as they will go quickly.
One of my challenges and a fun part of traveling is trying to recreate dishes I try around the world. I have been able to recreate most dishes I fall in love with, but I knew at my first bite of the Coccoli that it would be something I would not be able to recreate. This is a one of a kind and I will have to head back to Pizza Rock if I want more; and I do! The flavor combinations of these little pillows will blow your mind, and the cheese - ohhhh the cheese! A must-try if you are in Vegas!
I loved the atmosphere at Pizza Rock, it’s definitely a great place to hang out with friends, family, or even to go on a low key date. It’s a new favorite of our families and I know you will love it too! Next time you are in Vegas be sure to check it out!
