Summer Cooking With Guy Fieri Sausage! #CookingWithGuyFieri

With summertime right around the corner I find myself looking for any way out of having to make my kitchen hotter than it already is. When I want full bellies, great food and less heat inside the house I turn on the grill! I’d be lying though if I said I only grill because of the heat… the truth is I don’t need an excuse to grill. I am that crazy neighbor out using her grill when it’s 20 degrees outside, desperately praying that the propane tank hasn’t frozen up.

Nothing makes me more excited for summer than firing up the grill. A huge grill favorite around our house is burgers and brats; as soon as they start sizzling mouths start watering. Unfortunately if you lean on the grill to bring all the flavor you will end up with some pretty bland sausage. You need sausage that bring home spectacular flavors, and Guy Fieri has some that will definitely turn up the heat for your next meal. With flavor packed combos like Fajita Seasoned Chicken Sausages and Mozzarella and Parmesan Cheese Pork Sausages you can’t go wrong.

Having a BBQ? Toss these on babies on the grill and wow friends and family. In our house buns are for burgers, but sausages were meant for something better especially these beauties! One of my favorite dishes is this Grilled Summer Sausage casserole. You can heat this up really quick in the oven, a skillet or on the grill. 

Grilled Summer Sausage casserole:

One package of Guy Fieri Italian sausage 

1 tablespoon butter or olive oil

½ cup medium onion, diced

4 asparagus stalks

1/2 teaspoon red pepper flakes

1/2 teaspoon ground pepper

1 teaspoon Oregano

1/2 teaspoon salt

1 tsp garlic

1 zucchini, cut in half lengthwise and then into pieces

1 yellow squash, cut in half lengthwise and then into pieces

1 red, yellow or green pepper cut into strips

Instructions - 

Grill:

If grilling put all ingredients minus your sausage into a foil package and grill for about 20 minutes. Grill your sausage separately to the directions on the package and dice up and mix in with the rest of the ingredients when done grilling and serve. 

Stovetop:

Dice up the sausage sauté in a large frying pan with onions and butter, toss all other ingredients in and cook over medium heat for 20 minutes. 

Oven:

Toss all ingredients in a casserole dish mix together and cover with aluminum foil. Bake for 35 minutes on 350.  

You see that?! That's yummy goodness oozing out. YUMMY! I promise this will be a huge crowd pleaser recipe and guests will be begging for seconds.

Healthy Family Traditions with DOLE Red Grapefruit Sunrise Fruit Bowls!

One of my earliest memories of my grandfather is sitting down with him and enjoying one of his favorite things… grapefruit. We would wake up super early, sit down at the kitchen table, he would get half and I would get the other half. He would put salt on his half and sprinkle sugar on mine. We would then talk about our plans for the day or try to guess how long Grandma would end up sleeping in.

I would love to say that I am a completely homemade type of mom, that everything that comes out of my kitchen I slaved over for hours to be able to provide for my kids, but I'm not. And in this day in age I see nothing wrong with it. Now don't get me wrong I have friends that will make completely homemade snacks like fruit leather and more that take at least several hours to complete from start to finish, but I just don't have time for that. I commend them for it, but I just can't. So when I go to the store I am looking specifically for items that fit this criteria:

:: Healthy

:: Mess Free

:: Convenient 

:: Can be eaten on the run 

:: And the last and most important... kid friendly. Something they will actually eat! 

There are a lot of things that fit my first four criteria, but my kids won't eat it or they complain about it; which essentially equals me and my husband eating whatever it is or money down the drain. Either way it's not good. 

Our family in total has been to 31 states in the last 2 years! That's a lot of traveling and a lot of food for everyone so being able to have a easy snack taken care of is huge!

I don't have enough time in the day to spend watching my adorable 4 year old slowly eating his snack and making "good guys and bad guys" out of it. Food time for him turns into a full blown production. So having something he can eat anytime anywhere is a lifesaver.

What I do have time for and a snack that meets all the "demanding mom" criteria are the Jif To Go Dippers. Have you tried them yet? I would love to know what you think. I toss one to the kids as we are heading out the door or to my hubby when he goes on a bike ride. Jif To Go Dippers are also great for adults! My husband loves having something he can stop and quickly eat that gives him energy to keep riding. Now keep in mind he cycles 30-60 miles every time he goes out! So that says a lot about how much he approves of Jif To Go Dippers as a quality snack. 

We also have enjoyed them on the trip we are currently on; right now I am writing you from Martha's Vineyard! We found that Jif To Go Dippers are a great snack to take on the plane and to have when we haven't been close to food options or aren't quite hungry enough for a whole meal. My favorite is the chocolate and my hubbies favorite is the peanut butter and the kids like both. I absolutely love Jif To Go Dippers as an alternative to chips and other unhealthy snacks. Typically when you need a quick snack you will find yourself going for a greasy bag a chips and feeling very unsatisfied afterward, but that's not the case with Jif To Go Dippers. You know that you are getting protein, fiber, potassium and healthy fats when eating peanut butter that you need. I don't know of any other convenient on the go snack that can do that! National Coffee Day!!

I'm not kidding, it really is National Coffee Day! Anyone else doing a little happy dance? As a coffee expert (ok, so that's a self appointed title) I have been through a lot of different brands in search for that perfect not over roasted smooth cup of coffee I can look forward to every morning and I found it three years ago in Eight O' Clock Coffee.
