Mamas Monday Meals: Easy Peasy Lemon Squeezy Eggs Benedict! Yummy!!

Yup, we had breakfast for dinner tonight! And it was sooo... GOOD!

Have you made Eggs Benedict before? It sounds fancy but I promise it it super easy to make!

I love adding little twists to my recipes and I had a can of Pillsbury crescent rolls I needed to use soon, so I decided to use them on this recipe!

Ingredients:

1 Can of Pillsbury crescent Rolls -  Or even better would be there sheets.

Any type of meat that you like - we made these pretty healthy by using turkey bacon.

Eggs - one for each

Hollandaise Sauce:

4 egg yolks
2 Tbsp lemon juice (the juice of 1 small lemon)
2 Tbsp cold water
Salt, to taste
Cayenne pepper (or a dash of Tabasco sauce), to taste
1 stick of butter

How to prepare:

:: Lay your dough out and roll it slightly thinner.

:: Cut dough into circles (I used a cup to do this, and it worked fine)

:: Bake at 350 for 5-10 min. Be sure to check on them so they don't burn.

::Cook your meat the way you would prefer, and poach your eggs. (boil in a pot of water) Make sure your water is already boiling before you put them in.

:: To make your Hollandaise Sauce put all your ingredients in a small pot and put over medium heat. Whisk until it becomes light and completely mixed.

Immediately take off heat and and pour over your eggs.

Enjoy!!

Super easy breakfast that can be made in less than 30 minutes!

FREE Slurpees at 7-Eleven... Or You Can Make Your Own!

Today (7/11), 7-Eleven stores will be giving out FREE Slurpees From 11:00am to 7:00pm.

Keep in mind these are only 7.11 oz cups.

And if you are wanting something a little bigger you can easily make them at home!

We just made homemade slurpees and as you can tell my little girl loves them!

These are super refreshing in the summer!

Here is what you need to make them:

:: 1 Packet of KoolAid

:: 2 Cups Club Soda

:: 1/2 Cup of Sugar

:: 3 Cups Ice

Blend everything but the ice together in your blender, and then add the ice.

Once everything is blended stick it in the freezer for 45 minutes, and it's done!

Super simple (cheap), and great to have in the summer!

Mamas Monday Meals: Crock Pot Chicken Tacos! Easy and Yummy!!

Guess what we are having for dinner tonight? That's right Crock Pot Chicken Tacos!! This is a super easy recipe to make!

I have my Chicken in the crock pot right now!

ngredients:
2lbs chicken breasts (about 4 large, or 5 medium,) cut in half
1 packet taco seasoning
16oz jar salsa
Corn taco shells
Taco toppings: chopped tomato, lettuce, green onions, cheese, black olives, etc

For the Mexican Rice (can easily be halved):
1 teaspoon extra virgin olive oil
1/4 cup minced onion
salt & pepper
1 cup salsa
1 cup jasmine rice
2 cups vegetable broth

Directions:

For the Chicken Tacos: Lay chicken breasts in a single layer in bottom of crock pot. Sprinkle on taco seasoning then pour in salsa. Lift chicken breast halves to get salsa underneath. Cook on low for 4-5 hours, or high for 2-3 hours, or until chicken breasts are tender. Shred then mix with some or all of the cooking liquid.
Preheat oven to 425 degrees. Add shredded chicken into the bottom of taco shells then top with cheese. Bake on a foil-lined baking dish for 2-3 minutes, or until cheese is melted. Top with desired toppings.
For the Mexican Rice: Heat oil in a pot over medium heat. Add onion, season with salt & pepper, then saute until tender, about 5 minutes. Add salsa, rice, and vegetable broth then bring to a boil. Lower heat then place a lid on top and simmer until rice is tender, about 20-25 minutes. Serve alongside Chicken Tacos.

Mamas Monday Meals: Ooey Gooey Philly Cheese Steak Pull-Apart!

Today's Monday Meal was just for my hubby, he loves Philly Cheese Steak sandwiches I thought I would take that and put a neat spin on it!

Here is what I came up with, Philly Cheese Steak Pull-Apart!

This is super easy to make and I think it would be a hit at a party.

Ingredients:

:: 1 can of Pillsbury Rustic French Bread

:: 1 Package of Hormel Beef Roast - I found this to be the easiest and tastiest meat option.

:: A small package of mushrooms

:: 1 green pepper

:: Swiss Cheese

:: 1/2 a can of cream of mushroom soup

As you can see above I laid out my dough and cut it into little squares. Then I started to add my ingredients, you can really do it in any order.

I grilled my mushrooms and green pepper a little bit before adding them.

Once you have topped off your little squares with you ingredients, line your loaf pan with a strip of plain dough. (greasing it first)

Then carefully stack all of your squares and tilt them into your pan.

Bake at 350 for 30 minutes. I also put an egg wash on mine 10min. before it was done.

As a tip you could pretty much use any ingredients you want for this! Get creative! Smile
